In looking for something for today’s post I drew inspiration from Chris at www.caribbeanpot.com. Although he sometimes features vegetarian recipes, his website is definitely a carnivore food blog. However, I find a lot of his dishes are easy to customize for a vegan diet. Last week his Caribbean tuna sandwich gave me instant hunger pangs. I vowed to make it for lunch one day soon. It was definitely worth the wait.
I swapped out the cans of tuna by supplementing my own mock tuna recipe which you can find here. I added all the ingredients Chris listed such as the cucumbers, seasonal peppers, avocados, and etc to my vegan tuna salad. Then I placed it on a whole wheat bun and enjoyed it with some braised brussel sprouts. You can go to Chris’ Youtube channel to watch him make the Caribbean Tuna Sandwich and get the recipe.
